I want to help make things easier for her. What's the best way for me to do this? Thank you!

It sounds like you’re already being a good friend by asking! First I would be willing to listen and know that the first year after diagnosis is usually the hardest; it will take her awhile to accept the life change and learn new habits. Second, I would recommend cooking something for her! Learn as much about celiac disease as you can. Invite her over for dinner and cook her a completely gluten-free meal (make sure to clean your kitchen well to prevent cross-contamination), or bring gluten-free cookies to a social event you are both attending. It means SO much when someone goes out of their way to feed you when you find it so difficult to feed yourself!

How did you become a summer intern?????? My sister has had incidents where a restaurant said a meal was gluten free but then used sauces that made her stomach upset.

Once the gluten gets to the intestinal tract, there’s really no way to go back or reverse the damage. I have found Pepto Bismol and Immodium to be helpful when I have upset stomach, cramps, and diarrhea. Unfortunately I haven’t found any over-the-counter medications to be helpful for bloating or gas! This is a great question for your sister to ask her doctor. They will be more familiar with everything that is available.

I also sometimes find that I need to avoid high-fiber or spicy foods after I get “glutened”. My system seems to be more irritable for a couple days. Every person is different, though, and it’s important generally to eat fiber.

I was diagnosed with Celiacs about a month ago and I am completely overwhelmed! I do not even know where to being. Do you have any good tips for people who are just starting out? Are there cretin things I need to look for that I would not think of? Thank you!

It IS overwhelming, but know that it definitely WILL get better! I think my first year was the roughest, and after that it got easier and easier. I suggest not eating out at restaurants until you get comfortable with the diet and all the questions that need to be asked. I got glutened so many times eating at restaurants because I didn’t think the salad dressing would have gluten, or chicken breast would be marinated in soy sauce, or that the tortilla chips were fried along with the chalupas. I would also get very overwhelmed with ordering and felt embarassed or pressured when I was talking to servers or restaurant workers about the menu. It will be trial and error, but you will need to talk to chefs, managers, and servers in detail to make sure that your meal is gluten-free.
